Flying Solo.

I left work a little early this afternoon because I was feeling like 10% human, 90% zombie after last night’s late night wall-scratching party.  When I got home, the dogs went nuts in the backyard, so naturally I grabbed my camera to document whatever was setting them off.  Look (closely) at what I found…

There were THREE big beautiful deer hanging out back there – giant antlers and all!  Good hunting dogs.  :)  So I took a long glorious nap and got all geared up to make a NEW delicious version of the favorite veggie burgers, and I was going to have them waiting when Casey got in from the airport. 

An hour before I was supposed to pick him up, he texted me to stay that his first flight flew aaaaaall the way to Cincinnati, and then turned around and landed back in Indianapolis.  What?  Apparently there were too many planes trying to land all at once in Cincy, and his poor little plane didn’t have enough fuel to keep circling around and around.  So he ended up back where he started, with no more available flights out for the night.

I’ll be picking him up in the morning, but for now that leaves me all alone here in Charlotte for one more night, boooooo.  I scrapped my plans for veggie burgers and did what any girl in my situation would have done – I ate an entire block of tofu by myself.

I used my basic crispy tofu method, as outlined in one of my favorite old posts – How To: A Tofu Tutorial.  I am telling you, if you’ve never tried tofu before, OR if you have tried it and you thought it was mushy and weird – give it one more shot.  I assure you this method is foolproof and delicious!

A dinner cooked 100% on emotion and cravings.

Entire block of tofu – all 64 pieces, just for me.  And some delicious grilled peppers heated with an edamame and corn mixture.

I cut up the bell peppers first and just let them brown in the pan – flipping them over a few times to avoid burning.  I added the frozen edamame mixture and heated it all through with a little coconut oil, salt and pepper.

Just as the tofu finished crisping, I drizzled it in some sweet and sour sauce from Trader Joe’s.  Sweet and spicy – two of my favorites.

The beauty of Lite tofu, is being able to eat the whole block myself and not feel one bit guilty.

Yummy vegetables, which I doused in soy sauce half way through eating.  Everything is better with soy sauce.

While I ate my dinner, I drowned my sorrows in a pretty pink spritzer drink – sparkling water with a splash of POM!

I just received a whole case of this yummy blueberry pomegranate POM juice.  It is potent and TASTY!  A little goes a long way.

The dogs were expecting Casey to come home too, so I had to explain to them that we were the three amigos once again.  Huey was beside himself when he heard the news.

I tried to console him, but he was too depressed to talk about it.

Eventually, he flung his body to the other side of the couch (seriously), and laid like that the rest of the night.  He couldn’t even be bothered to curl up.

Indy thought it was funny that Huey was so bent out of shape…

Until he heard the news about Casey…he cried out in disbelief! “What do you MEAN he won’t be home tonight!?!”

With Casey out of town, I tried to get my kisses elsewhere, but it just wasn’t the same…

You are so stinking funny. There is absolutely nothing wrong with eating an entire block of tofu by yourself. If that is your indulgence, I’d say that’s just allright.

Your pupps are too cute! FH wants to get a puppy soon.. and I am thinking I did not dogproof my house when we renovated… :(

I recommend women don’t blog about when they are home alone at night etc until well after the fact.
Just seems a good safety/privacy rule even though it is unlikely anyone knows where a blogger lives, but I still think safety first.

Hey Marla – thanks for your comment, and concern! I tend to not mention if Casey will be gone for a whole weekend or extended period of time. But I published my blog at 10pm last night, and he’ll be home by 9am so I figured I was probably okay. Not to mention I have 2 very LOUD barkers that sleep with me, and a gun in the bedroom closet.

I appreciate your concern though, and agree that it’s important to not give too much info out through the blog!

I am so glad to read that I’m not the only one who eats an entire block by myself. I did it the other day and couldn’t get over myself. But I figured there are much worse things I could have been eating and maybe my body was just needing some protein haha! I love it!

Emily if your idea of indulgence is eating 200kcal worth of tofu all by yourself, you are a better woman than I! I am glad to see that I am not the only person who communicates extensively with their dogs. Loved the pictures of the dogs and that veggie mix looked awesome. I haven’t used the frozen edamame mix before but I do use TJ’s roasted corn which is an awesome addition to veggie mixes.

Lite tofu? I don’t think I’ve ever seen that… I know I’ve wanted to scarf the whole block once or twice recently–tofu just WASN’T this good 20 years ago when I was a vegetarian for the first time!! ;)

How do you add a sauce to your tofu without it getting all smokey and burned from the sugar in the sauce? The last time I tried to do it I thought I would burn the house down with all the smoke!!!

We have a chocolate lab and a yellow lab also! Aren’t they the best dogs. We also have a pomeranian who is king of the dogs. You need one! Just kidding, two dogs are enough, three is a handful!

I’m still working on perfecting your tofu method, but it’s definitely been better crispy than when I first started experimenting with tofu! I wish I could find the lite version somewhere around here.

So – how many days, truly, can you leave a brick of tofu in your fridge? That is, already unsealed and in a plastic container of water? I change the water every 3 days or so. It smells ok, but how will I know when it’s expired?

Well keeping it in water it critical, so you are doing it right! If it was me, I would probably only give it a week or so. But tofu doesn’t last very long in our house! :)
